Crispy Peanut Butter Rolls

My brother used to make these all the time when we lived at home. I was thinking of him over the weekend and just had to make them with Kaiya. The chocolate filling is a lot darker then I remember, maybe next time I might try these with melted milk chocolate chips instead.


Light Corn Syrup: 1 Cup
Sugar: 1 Cup
Smooth Peanut Butter: 1 Cup
Butter: 3 tbsp
Crisp Rice Cereal: 6 Cups

Filling
Butter Softened: 1/2 Cup
Icing Sugar: 2 Cups
Cocoa: 1 Cup
Water: 1/4 Cup
Vanilla: 1 tsp

Cook syrup, sugar, peanut butter and butter in a large saucepan over medium heat. Bring to a boil stirring cnstantly. Remove from heat and add cereal, mix till coated. Press cereal mixture onto dampened wax paper into a rectangle about half san inch thick. Let stand 15-20 minutes.
Combine filling and beat till smooth. Spread over cereal. Roll up like a cinnamon bun and wrap with saran wrap. Chill in the fridge for a few hours, cut into 1 inch thick slices to serve.
